Recipes that crossed the Atlantic
Cornflour, dulce de leche, puff pastry. These are not local pastries with an Argentine name: they are the ones from over there, made the way they are made over there.
The bakery is in the room
The oven stands in the room. While you wait for your coffee you can watch where the thing you are about to eat comes from.
Your dog comes in with you
Fresh water by the door and a place in the shade. Nobody waits outside tied to a lamppost here.
What there is today
The cabinet changes with the oven. These six families are never missing.
Open six days. On Tuesday the oven rests.
It is the one rule worth remembering. The rest of the week we are here from eight — and the best of the tray rarely survives until ten.
